Recipe: Lemon Blueberry Pudding Parfaits

Creamy and tangy lemon pudding combined with fresh blueberries and crunchy oat crumble makes for a gourmet dessert that is surprisingly light. The pudding itself is made from high-protein soy milk and vitamin C-rich lemons.

Blueberries are one of my top ten beauty foods for their extraordinary antioxidant content. The antioxidants in blueberries may help protect against wrinkles and aging.

Ingredients:

For the lemon pudding:

  • 4 cups unsweetened soy milk
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • Pinch salt
  • Optional pinch turmeric, for yellow color
  • ½ cup cornstarch
  • ⅔ cup lemon juice
  • 2 tablespoons lemon zest
  • 2 cups fresh blueberries

For the almond oat crumble:

  • ½ cup rolled oats
  • 2 tablespoons almond flour
  • 1 tablespoon slivered almonds
  • ¼ teaspoon cinnamon
  • Pinch salt
  • 2 tablespoons maple syrup

Instructions:

Add soy milk, sugar, vanilla, salt, and turmeric (if using) to a medium-sized pot and heat over medium-high heat.

In a small bowl, whisk together lemon juice and cornstarch until cornstarch is fully dissolved. Add the cornstarch mixture to the pot with the soy milk mixture and whisk continuously for around 5 minutes, until the mixture has thickened significantly. Remove from heat and whisk in lemon zest. Let cool and refrigerate for at least 4 hours or overnight.

Preheat the oven to 350 degrees Fahrenheit and line a small baking sheet with parchment paper.

In a small bowl, combine oats, almond flour, slivered almonds, cinnamon, and salt. Stir in maple syrup and mix until fully coated. Spread this mixture in an even layer on the prepared baking sheet and bake for 15-20 minutes until golden brown (watch to make sure it does not burn on the edges).

In a small glass, layer pudding, blueberries, and crumble. Repeat for the remaining three parfaits.
