Soba noodles are thin noodles made from buckwheat, and they have a slightly nutty taste. Here, the soba noodles are mixed with protein-packed edamame, tangy grapefruit, crisp radishes, and an earthy matcha dressing, for a delicious tasting pasta salad.
Matcha powder is a concentrated form of green tea that is rich in antioxidants, particularly the antioxidant EGCG, which may aid in weight loss. The polyphenols in matcha may also protect against sun damage.
Ingredients:
Serves 6
1 9.5 oz package soba noodles
1 cup edamame
1 cup sliced radishes
1 large grapefruit, peeled and chopped into segments
2 scallions, thinly sliced
2 teaspoons matcha powder
1 tablespoon honey
1 tablespoon toasted sesame oil
2 tablespoons seasoned rice vinegar
Instructions:
Bring a medium-sized pot of water to a boil and cook soba noodles according to package directions. Drain noodles and add to a medium-sized bowl along with edamame, radishes,
grapefruit, and scallions. In a small bowl, whisk together matcha powder, honey, oil, and vinegar. Pour the dressing over the salad and toss everything together until fully combined.
