Recipe: Blueberry Chia Kiwi Yogurt Parfait

This vibrant parfait is delicious, filling, and loaded with beauty nutrients! It actually uses four of my top 10 beauty foods!

Creamy chia seed pudding is dyed blue from blueberries, which are full of anti-aging antioxidants. Chia seeds and walnuts are excellent sources of omega-3 fatty acids, which help keep skin smooth and reduce inflammation. Kiwi adds a fruity, tropical flavor as well as lots of vitamin C to help stimulate collagen synthesis and boost your immune system.

Creamy and tangy yogurt is packed with calcium, which is vital for strong and healthy bones and teeth. Plus, this recipe contains a whopping 15 grams of fiber, which can help you stay slim by keeping you fuller for longer.

Ingredients:

1 cup unsweetened almond milk (or milk of choice)
1⁄2 cup fresh or frozen blueberries
1 tablespoon maple syrup
1⁄4 cup chia seeds
1 cup nonfat vanilla Greek yogurt
2 kiwis, peeled and chopped
1 tablespoon toasted walnuts, chopped

Instructions:

In a blender, combine almond milk, blueberries, and maple syrup to make “blueberry milk”. Stir in chia seeds and let sit overnight (or for at least 1 hour) to thicken. In a parfait glass, layer chia pudding, yogurt, and chopped kiwi. Top with more kiwi and toasted walnuts.
