Recipe: Gingerbread Cookie Dough Bites

These chewy cookie dough bites capture the warm winter flavors of cinnamon and cloves with a touch of spicy ginger. They are the perfect simple dessert or snack to prepare during the busy holiday season.

Walnuts, one of my top ten beauty foods, are high in beauty-boosting omega-3 fatty acids. Possible benefits of omega-3s include smooth hair, glowing skin and healthy eyes.

Ingredients:

  • 1 cup rolled oats
  • 1 cup walnuts
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup pitted medjool dates, chopped
  • 1 tablespoon molasses
  • 1 teaspoon vanilla extract

Instructions:

To a food processor or high-speed blender, add oats, walnuts, ginger, cinnamon, cloves, and salt and blend until a flour forms. Add dates, molasses, and vanilla and blend again until a sticky dough forms. Roll the dough into 16 balls and chill in the refrigerator until ready to serve.

Yields 16 servings
