Recipe: Pina Colada Smoothie

This smoothie will whisk you away to a tropical island even if you are stuck at home. It is sweet, slightly tangy, creamy, and nutty.

Pineapple is a great source of vitamin C, an important antiaging vitamin that also helps our immune system function optimally. Both bananas and pineapple contain potassium, which improves circulation and may help with water retention and blood pressure control.

 

Ingredients:

1⁄2 small frozen banana
1 1⁄2 cups frozen pineapple
1 1⁄2 cups reduced fat canned coconut milk
Optional: 2 shots of rum for an alcoholic beverage

Instructions:

Add all ingredients to a blender and blend until smooth. Top with toasted coconut flakes if desired.

Yields: 2 servings (about 6 oz each)
