Kids in the Kitchen: Lunch on a Stick

Recipe: Kids in the Kitchen: Lunch on a Stick

Kids can have a lot of fun making various “kebabs”, creating different patterns using various colors and shapes of foods. This lunch consists of a cheese and tomato kebab, a fruit kebab, and a hummus roll-up kebab. I prefer using bamboo skewers or straws instead of wooden skewers.

Ingredients:

4 cubes fresh mozzarella cheese (or bocconcini)
4 cherry tomatoes

3 cubes fresh pineapple
3 fresh strawberries
3 fresh blueberries

1 large whole wheat tortilla
2 tablespoons hummus

Instructions:

For the cheese and tomato kebab, alternate threading mozzarella cubes and cherry tomatoes on a bamboo stick or straw. For the fruit kebab, alternate threading pineapple chunks, strawberries, and blueberries on a bamboo stick or straw. For the hummus roll-up kebab, spread hummus all over the surface of a whole wheat tortilla. Roll it up tightly, slice into small pieces, and thread on a bamboo stick or straw.
