Recipe: Kids in the Kitchen: Turkey Pinwheels

These turkey pinwheels are fun and easy to make with your kids! Apple slices add fiber to the meal, while the smoothie gives a calcium boost.

 

 

 

 

Ingredients:

1 8 inch whole wheat, spinach, or tomato tortilla
1 tablespoon low-fat cream cheese
1 cup fresh spinach
1 slice Swiss cheese
1 slice deli-style turkey

1 small apple, sliced plus 1 teaspoon lemon juice (or 1 cup apple chips)

1 10 oz store-bought smoothie

Instructions:

Spread the cream cheese on the entire surface of the tortilla. Place spinach leaves on top. Add Swiss cheese and turkey, leaving a little room before reaching the edge of the tortilla. Roll up tortilla tightly and then slice into small pieces, around 2 inches thick. Toss apple slices in lemon juice to preserve their color. Pack these apple slices or apple chips on the side along with a smoothie.

Yields: 1 serving
