Watermelon Mint Gazpacho

Recipe: Watermelon Mint Gazpacho

This cool and refreshing soup is the perfect summer treat. It tastes like a classic gazpacho, but has a bit of sweetness from the watermelon and coolness from the mint. It’s very refreshing, especially served cold.

Tomatoes and watermelon in the gazpacho provide lycopene, an anti-aging antioxidant that may protect skin against sunburn, making this a perfect summer soup. Tomatoes are also a great source of potassium, which improves circulation and gives your skin a radiant glow.

 

Ingredients:

1 lb tomatoes (about 4 large tomatoes)

5 cups cubed watermelon

1 English cucumber, peeled

3 cloves garlic

1⁄2 cup red onion, chopped

1 teaspoon salt, plus more to taste

1⁄4 cup lime juice

2 tablespoons apple cider vinegar, plus more to taste

1⁄2 packed cup fresh mint

Pepper to taste

Instructions:

Add all ingredients to a blender and blend until smooth. Adjust seasoning to taste. Chill for at least one hour before serving.

Yields: 6 servings
