Recipe: White Bean Tomato Avocado Bowl

This light lunch bowl is packed with beauty foods. Crisp spinach leaves are full of lutein, which may help keep eyes clear and bright by protecting against cataracts. Sweet and juicy tomatoes contain lycopene, which may help protect skin from damaging sunburn. Creamy avocado is a great source of vitamin E, which helps protect natural oils in the scalp, keeping hair smooth and shiny. And white beans and quinoa provide satiating protein which promotes strong nails, long hair, and smooth skin.



1 cup canned white beans, drained and rinsed
1⁄2 cup cooked quinoa
1 cup baby spinach
1⁄4 of an avocado, sliced
1 cup sliced cherry or grape tomatoes
1 tablespoon lemon juice
Optional garlic powder or other seasonings of choice


Add all ingredients to a large bowl. Add garlic powder or seasonings if desired.
